When I dip, you dip, we dip. DIP.
The lazy days of summer are just around the corner. Sunshine and pool time, and Vitamin D are ready for us and (I'm ignoring my pasty, white skin and cellulite and pretending that) we are ready for them.
We like our summertime dinners to look something like this: Some sort of seafood on the grill. Or sans grill, ceviche. We’re really not picky. Some sort of fresh salad with pretty tomatoes. Fresh herbs. There’s probably cilantro within reach. Eating it outside makes life better. But mostly the point is that it’s fresh, it’s easy, it tastes amazing, and there is no mess in my kitchen (<---that’s really the point, though).
A lot of our warm weather lunches look like a smoothie. Mostly because they are a smoothie. What? They’re good for you. And still, no mess in my kitchen. Gives a girl a happy heart.
And we don’t snack a whole lot these days, but sometimes when we’re on the go, and we just need something to fill our bellies. Or, when we’re outside playing working, and we just don’t want to can’t come in and fix a full meal right now. You know what we like, in that case? Berries and dip! It hits the spot every time. And the sum total of the mess in my kitchen is that I have to rinse out the blender.
“Peanut” Butter Dip & Fresh Berries*This is a bit of an approximation. I never, ever measure this stuff. I just dump it in until I’m done.*
2 C. Nut butter, plain (Using a nut butter from soaked and dehydrated nuts is best, but I am not the food police, so relax and use what you have)
1 1/2 C. Coconut Milk (You can use good, healthy, grass-fed milk if you’re eating dairy)
1/2 t Sea salt
3 T Raw honey
2 t Vanilla extract
Throw all your dip ingredients into a good blender. Blend on high for 30 seconds. Refrigerate and serve with fresh fruit for dipping.
